Issue with noting items

I used to play Runescape and knew the game well but took a break for close to 10 years. I can't remember a  ton, but know I used to be able to note sharks, logs, etc., to sell or trade.  I can't do that now. I see the toggle to enable notes and that let's me note things like ranger boots or berets, but I can't figure out how to get sharks or logs or herbs to note so I can sell them in the exchange.  Any help would be greatly appreciated!

You can use magic notepaper to note items.

At the bottom of your bank in the right hand corner there is this note item button. You can try to use this. Or you can do what Senug has said and use magic notepaper.
